In summary - breathtaking views, lovely terrace for drinks and meals, UNIQUE access to swimming in the Mediterranean and sunbathing, and stately palace type of property, elegant and historic.
In detail - if you know the Amalfi coast, you know that most towns require a huge amount of climbing and steps to get around. Sorrento is much flatter (but on an incredible cliff) and is the place to start or stay if you want to just relax. I mention that because Sorrento was our Amalfi coast starting point and we're glad we did it (Positano was incredible but was a lot of effort walking at first).
I wanted to give my wife a dream vacation and we'd never been to Italy. I picked Europa Palace on my own based on reviews and pictures. Criteria was Naples/bay/Vesuvius view, pool, ocean swimming, gardens, restaurant with good reviews. Considering that I knew nothing beforehand, the Europa Palace was a real find. Our Sea View room (ONLY get that!), the terrace, pool, ocean swimming, easy walk to Sorrento center, ferries to coastal towns and Capri go right out of Sorrento, view includes that small port, fun and entertaining to watch. But remember one thing - the VIEW - WOW - morning noon and night it is UNBELIEVABLY BEAUTIFUL. We sat for hours, drinks, meals, terrace or our room balcony. I am sure other hotels are fine, but there's just no reason we would go anywhere else if we return to Sorrento. And no reason you wouldn't be happy if you stayed there.
